The ENSAIO range is what it is: a trial. Every year they have wines in the cellar that are born from the desire to test vineyards, grape varieties, styles, etc. When one of these wines convinces them, but they do not want or can do it this way in the next harvests, they make it a TRIAL. The grapes were hand-picked from a vineyard renowned for its excellent quality, at the foot of the Serra da Gardunha. It fermented with natural yeasts in a small 500 l vat for approximately 7 days. Skin contact was maintained with 3 to 5 manual punch-downs per day. After pressing in a small basket press, it aged for 12 months in a used barrel where it underwent malolactic fermentation. After being filtered, it did not undergo any fining or filtration. The result is a complex wine, with a smooth texture, rich in aromas of red fruits, coconut, vanilla and cloves. It presents excellent complexity, with a long and elegant finish. An exceptional wine.
