Red Asylum 2019

Low intervention wine made in partnership with Dirk Niepoort. The grapes used in the production of Manicómio Tinto 2019 were hand-picked and foot-trodden in a traditional wine press, with carbonic maceration and a month of infusion on the skins. The juice is naturally fermented with indigenous yeasts and without temperature control (wild fermentation), completing the alcoholic and malolactic fermentation. This red wine is unfiltered and may present sediment over time.
