Zafirah Vinha da Rocha 2019 is the result of the work that Constantino Ramos has been carrying out since 2016 in the recovery and prospecting of abandoned or poorly cared for vineyards that exist along the Vale do Mouro – Monção, a valley that has always been locally recognized as a place of excellence in the past for the production of classy, ​​quality reds. Grapes are hand-picked into small boxes, with a large selection right in the vineyard, with only bunches in perfect ripeness and health being harvested. Destemming. 48 hours of pre-fermentation maceration followed by direct pressing. Fermentation in new French oak barrels. Aged for 12 months in barrels, followed by an 8-month aging in bottles. A limited edition of 300 numbered bottles.
