We decided not to rip out a hundred-year-old tree soil and recover it with layers and ribs completely identical to the existing material. Therefore, we resorted to the plantation of the old vineyards belonging to Rupestris du Lot, later injected with the old vineyard to obtain a new vineyard equal to the existing one. It's expensive, something reckless and risky, but only then will we have the total recovery of the vineyard that makes the wines that we love so much. We continue with many varieties, all mixed, although there are parcels where reds dominate and others that are still white. Variety is the spice of life.
